Lemon Garlic Alfredo Sauce [vegan + Whole 30]

Alfredo Sauce is a kid-friendly family favorite. When I started Whole 30, though, I struggled finding something that was creamy enough, cheesy enough, and didn’t taste like I was trying really hard to cover up the fact that it was dairy-free. The perfect thing about this sauce is that it makes a great base for tons of add-ins! Although it is perfect on its own, you can mix it up by adding sun-dried tomatoes, capers, curry, or any other flavors.

LEMON GARLIC ALFREDO SAUCE INGREDIENTS
All you need to create this recipe are some simple ingredients.

  • Avocado Oil: 3 Tablespoons
  • Garlic: 3 cloves, chopped
  • Cassava Flour: 1.5 TBLspns
  • Coconut Cream: 1/2 can (I used coconut cream from Trader Joe’s)
  • Water: 1 cup or so depending on how thick you want your sauce
  • Italian Seasoning: 1 tspn
  • Nutritional Yeast: 2 TBLspns
  • Lemon: 1 lemon, zested and juiced
  • Salt: 1/2 tspn or more
  • Pepper: to taste
  • (Optional) Sautéed Mushrooms: a pint or so added in at the end

HOW TO MAKE VEGAN ALFREDO SAUCE
The key to making this sauce is the roux. A roux is basically the combination of flour, fat, and a liquid. In this case we are using avocado oil (or ghee), cassava flour, and coconut cream. A simple roux is the base of making many sauces and thickening all sorts of different types of recipes.

ALFREDO SAUCE VARIATIONS
Want to mix up the flavors? This sauce is a great basic recipe staple that can be used in numerous recipes.

  • Add capers and extra lemon for a spin on chicken piccata
  • Add pesto for a creamy pesto pasta sauce
  • Add curry paste, potatoes, and carrots for a nice weeknight curry.

HOW DO YOU USE ALFREDO SAUCE?

  • Pasta Sauce: I love this on all sorts of noodles! Perfect paired with spaghetti squash.
  • Queso Dip: Keep it thick by not adding too much water. Add some extra flavor with more nutritional yeast and a little paprika.
  • Soup Base (with a little altering): This may take a little practice, but you can use this basic sauce as a great creamy base for mushroom soup, creamy chicken noodle soup, or other recipes that called for canned cream soup.

Ingredients

  • 3 TBLspn Avocado Oil or Ghee
  • 3 cloves garlic , chopped
  • 1.5 TBLspn cassava flour (or more if you want it thicker)
  • 1/2 can coconut cream (I use Trader Joe’s)
  • 1 cup water (you can use broth if you have it)
  • 1 tspn italian seasoning
  • 1/2 tspn salt
  • 2 TBLspn nutritional yeast
  • zest of one lemon
  • juice of 1/2 lemon
  • fresh ground pepper , to taste

Instructions

  • On low heat, sauté garlic in the oil (Do NOT brown!)
  • Once the garlic is fragrant, add the cassava flour, stir with a whisk for a few seconds to avoid clumps.
  • Making a roux, stir in the coconut cream slowly, adding water to desired consistency.
  • Sprinkle in Italian seasoning, salt, nutritional yeast, lemon zest, and lemon juice.
  • Keep stirring on low heat. Season to taste with pepper and more salt if needed.
